NOT many eight-year-olds dream of becoming wine makers, but Catherine Wallace is clearly one of a rare breed. The moral of this tale is, don't leave wine books lying around where imaginative youngsters might get sight of them.

Five years ago, and with rich experience of the wine trade, she and her partner Patrick bought Chteau de Combebelle in Saint Chinian - an appellation which, over the last 20 years, has produced some of the best red wine in the Languedoc.
